SCE (Southern California Edison), the local electric company, announced that there will be a power outage today from 8:00 am to 3:00 pm. I made my chicken porridge with shredded dried scallops (gas stove). Those of you who have had it know that that’s chicken porridge for my soul. That’s why I texted Jessy to come by and take some home for dinner when she leaves work.
Kenric was cleaning the windows of Grandma’s room. Those of you who know Kenric know that that’s a soul-ripping assignment. This time, he used newspaper with vinegar water. It’s takes a Facebook village to convince him. Thanks, everyone!
By 5:00 pm, the power was still not restored. Tsk! Tsk!, SCE. Kenric told Grandma we would go pick up some Chinese takeout since she said she liked Shrimp Fried Rice the other day, and when we return, we’ll have a candlelight dinner. Grandma said she gave away all her candles and was worried she gave away her kerosene lamp too, but she found it. It’s a huge and cool kerosene lamp. Within two seconds of Kenric setting it on the table, the lights came on.
So, we switched from Chinese to Mexican, and made tacos with ground beef. Hispanic friends, please don’t judge when you see the photo. It’s no tacos de lengua (my favorite) or anything your Mom or Grandma makes, but Kenric’s familia has been enjoying this simple recipe for decades.
The first time Grandma went home to South Dakota with Grandpa in the 40s, they brought taco shells and introduced tacos to her family. Tonight, half way through dinner, Grandma asked, “What will we ever do without tacos?” I hope Kenric’s Aunt and Uncle know a few good places in Sioux Falls for shrimp fried rice and tacos because everybody loves tacos, and Jessy loves my porridge!
