We bought a 1-quart carton of buttermilk to make cole slaw the other day, and used very little of it. So, we asked Grandma for a recipe that would use up the leftover buttermilk. “Oh, I have a really good bran muffin recipe! The girls loved them.”
The recipe required that we buy a box of Kellogg’s All Bran cereal and a can of Crisco. It required exactly one quart of buttermilk, so we actually had to make more using the dry powder that Grandma had all along.
After about an hour into sifting, beating and mixing, and getting everything into one bowl, “Holy………” I reminded myself we don’t curse in this house. “Did we really buy all this stuff and make 60 bran muffins because we didn’t want to waste the leftover buttermilk?!” I guess Kenric has forgotten his lessons in Home Economics.
We baked eight tonight, and the batter will keep for six weeks if refrigerated. Grandma said they looked good and, “We can have them for breakfast with honey.” I hope Kenric’s Mom and Aunt REALLY like these bran muffins!
